I love Bread! Having grown up in New Jersey, near New York city, we had the best bread and bagels. Bread was a part of every meal, but the bread today is a far cry from the bread back in the day!
Back in the day, wheat was processed by hand in fields naturally. At the turn of the 19th century,new techniques in grain processing made it possible to create massive amounts of refined wheat for a low cost. It was processed differently and genetically modified to stay fresher longer on the grocery store shelves. This is the bread that many people eat today. Luckily we do have choices.
