My mother, the original “Mimi” and the syndicated columnist of "The Slim Gourmet” Barbara Halloran Gibbons were two women who were ahead of their time in terms of making healthy food choices. Ms Gibbons described herself, as a person "allergic to calories" which made her "break out in fat," Barbara began her own weight-loss program, learning to creatively reduce the calorie count of her favorite foods. After she lost almost 100 pounds, Barbara began teaching and writing about her methods, which led to a career as "The Slim Gourmet."
In the 1970s through the 1990s, she wrote a three-times-weekly column which was syndicated in more than 200 major newspapers, domestically and internationally including The Star-Ledger in New Jersey which is where I grew up and my mother Mimi followed her column.
To this day one of my favorite recipe’s is what we all knew to grow and love is Mimi’s Cottage Cheese Pancakes. This recipe was originally printed in the New Jersey Star Ledger newspaper’s Slim Gourmet column on September 12, 1972. A wonderful way to start the day full of protein, low in calories. Mimi’s Cottage Cheese Pancakes
3 egg yokes
pinch of salt
4 tablespoons of Flour
3 egg whites
3/4 cup of low fat cottage cheese
In a deep bowl with a mixer, add salt to egg whites and beat until stiff
In another bowl, beat egg yokes and cottage cheese until smooth and creamy, then beat in the flour and fold in the egg whites.
Add batter one scoop or tablespoon at a time into a preheated skillet sprayed with PAM.
Makes 16 pancakes, 31 calories each.
