As the cooler weather of Autumn arrives, it’s the perfect time to make SOUP!! Here’s a low calorie soup packed with nutrition, add a little protein and you have a complete meal.
1 large head cauliflower – chopped
1/2 cup chopped onions or 1/2 cup scallions or 1/8 cup of dried minced onion OR 1/8 cup onion powder.
4-6 cups water
2 chicken bouillon cubes
1 teaspoon or turmeric or paprika
salt and pepper to taste
In a 5 quart saucepan, add all ingredients.
Cover and simmer until vegetables are tender (about 20 minutes.)
Puree with an immersion blender until smooth.
Add shrimp to it and you have a fabulous dinner!
