It’s Super Bowl Week ! Not only is it a Super Bowl for football but it is a Super Bowl for snacks, junk food and drinking. Most of us will be challenged to make healthy choices on Sunday. Whether you are going out to a Super Bowl Party or staying home and having friends over, having a plan will be the key to success! 

If you are going out to a party, try starting off by drinking water or seltzer then switch over to either a glass of wine or a beer.Continuing drinking water or seltzer in between alcohol, you will drink less alcohol. Fill up on veggies and choose one other snack item, not multiple ones. 

If you are staying home, try making some healthy options for you to have along with the other snacks. Below is a great Roasted Cauliflower Taco dip that goes great with veggies or chips.

Roasted Cauliflower Taco Dip

1 cup of Cauliflower

1/2 cup of Red Peppers

Roast both in the oven at 400 degrees for twenty minutes with olive oil and home made taco seasoning ( recipe below) 

Cool slightly then blend in a food processor with 1/4 cup of salsa, 1 tsp oil, 1 tablespoon of Walden Farms mayo. Garnish with jalapeño slices and and serve with veggies.

Homemade Taco Seasoning

    •    1 1/2 tablespoons cumin

    •    1 1/2 tablespoons chili powder

    •    1/4 teaspoon garlic powder

    •    1/4 teaspoon onion powder

    •    1/4 teaspoon dried oregano

    •    1/2 teaspoon paprika

    •    1 teaspoon kosher salt

    •    1/2 teaspoon black pepper
