3 egg yokes
pinch of salt
4 tablespoons of Flour
3 egg whites
3/4 cup of low fat cottage cheese
In a deep bowl with a mixer, add salt to egg whites and beat until stiff
In another bowl, beat egg yokes and cottage cheese until smooth and creamy, then beat in the flour and fold in the egg whites.
Add batter one scoop or tablespoon at a time into a preheated skillet sprayed with PAM.
Makes 16 pancakes, 31 calories each. Serve with low calories maple syrup or fresh fruit.
