Mozzarella And Pomegranate Salad
This is the best side dish for the holidays. It is bursting with flavor and color!
2 cups of fresh mozzarella cheese in water ( pearls or cubed) drained ( I cut the pearls into fourths)
2 cups of fresh pomegranate seeds ( I use three packages from Trader Joes)
1/4 cup of extra virgin olive oil
2 Tablespoons of balsamic vinegar
1 tablespoon of fresh lime juice
kosher salt and black pepper
1/2 cup of fresh chopped mint leaves
In a large bowl, combine mozzarella cheese and pomegranate seeds, add olive oil, vinegar,lime juice and stir together.
Season with salt and pepper, stir again.
Garnish with the mint before serving.
Best served either chilled or at room temperature.
