Zucchini Curls with Shrimp

2 Zucchini

8-10 Medium - Large Shrimp, peeled and deveined

½ yellow bell pepper, sliced thin

1 lime, juiced (about 2 tablespoons)

1/2 teaspoon kosher salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

2 tablespoons olive oil


1. Preheat oven to 400°

2: Using a vegetable peeler, peel long strips from the zucchini.

3: In a large bowl, mix the zucchini strips, shrimp, bell pepper sliced, lime juice, salt, pepper, garlic powder, and olive oil until the mixture is evenly coated.

4: Line a Baking Sheet with Tin Foil , spread the mixture into one even layer and bake for 8-10 minutes.
