Easy Stuffed Peppers: Take one medium sized bell pepper (one that would be about 1 cup chopped), wash, slice in half, clean out seeds and put aside. In a saute pan, brown 4-6 oz. ground turkey. Add to pan one cup combined of diced mushrooms and spinach. Mix well. Cook until veggies are tender. Stuff half of mixture into each pepper half. Top with olive oil, Sea Salt and Pepper to taste. Bake in oven at 400 for 10-15 minutes. If desired, top to fresh homemade marinara sauce
