National Fresh Fruit & Vegetables Month

June has been designated as the National Fresh Fruit & Vegetables Month and what better time to celebrate the season's bounty when all the farmer’s markets are plentiful! National Eat Your Vegetables Day is actually celebrated annually on June 17th.

It is recommended by the USDA Dietary Guidelines for Americans, to consume 3 to 5 servings of vegetables per day.  For most vegetables, one serving is equivalent of 1/2 to 1 cup and can be eaten either raw or cooked. 

 My favorite way to prepare vegetables this time of year is to grill them outside. with a little bit of olive oil, salt and pepper.  You can either place them directly over the fire or make a pouch out of aluminum foil, add your favorite seasoning and seal the edges and then place on the grill.  Grilled fruit is another great option. Peaches, pineapple, and all melons all hold up well on the grill and the result is a wonderful smoky flavor.  Of course eating fresh fruit and vegetables raw, are so sweet and great tasting this tie of year.
